Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1/2 cup softened coconut oil. 1/2 cup honey or maple syrup. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup dairy-free chocolate chips. 1/4 cup chopped nuts e.g., pecans or walnuts. 1 tbsp orange zest optional.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine almond flour, coconut flour, baking soda, and salt. Add softened coconut oil, honey or maple syrup, and vanilla extract to the dry ingredients. Mix well until a dough forms. Fold in the dairy-free chocolate chips, chopped nuts, and orange zest if using. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and flatten slightly with your palm. Bake in the preheated oven for 10-12 minutes, or until the edges turn golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
