Coffee Brittle (Microwaved)
Like peanut brittle, only with coffee beans. I’m quite pleased with how it turned out.

125g butter or margarine (I find margarine works a little better)
1 teaspoon vanilla essence
1/4 to 1/2 cup roasted coffee beans
Melt the butter in the microwave in a heatproof bowl (I used a small pyrex one). Stir in the sugar, then return to the microwave and heat for three minutes.
Take out of the microwave with oven mitts (it will be quite hot) and stir to ensure everything is well combined. Heat for two minutes more.
Take out of the microwave (again with the oven mitts), then quickly stir in the bicarb soda, then the vanilla essence and the coffee beans. Pour out onto a sheet of baking paper, carefully spread out a little with a spoon and leave until cooled.
The brittle sets quite quickly, so it is best to have the last ingredients set out before the microwaving is up. Although it is a simple recipe, the mixture gets incredibly hot, and is unsuitable for young and uncoordinated people.
Instead of coffee, you can add chopped nuts or dried fruit, or anything really. If you are just using nuts, I’d recommend only using 1/4 a cup of them, or they will overpower the brittle.
