Give your used coffee grounds a second life by turning them into delicious coffee-flavored popsicles. These frozen treats are perfect for a hot summer day or anytime you crave a unique coffee experience.
Ingredients: 1 cup used coffee grounds. 1 cup water. 1/2 cup granulated sugar. 1/2 cup heavy cream. 1/2 teaspoon vanilla extract.
Instructions: In a saucepan, combine the used coffee grounds and water. Bring to a simmer and let it steep for 10 minutes. Strain the coffee liquid through a fine-mesh sieve into a bowl, pressing down on the grounds to extract as much flavor as possible. Discard the coffee grounds and return the liquid to the saucepan. Add the granulated sugar to the coffee liquid and heat over medium heat, stirring until the sugar is completely dissolved. Remove the mixture from heat and let it cool to room temperature. Stir in the heavy cream and vanilla extract. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold. Freeze the popsicles for at least 6 hours or until they are solid. To remove the popsicles from the molds, run them under warm water for a few seconds to loosen.
