What kind of gift would Colin make or give M, and what would M's reaction be?

I feel Colin would make a separate area in their digital world as like a little birthday surprise getaway he crafted up. It containing details of M’s favorite things ranging from food, plushies, to even a mini rollercoaster to ride. It would all just be all over the place, items floating in the air or anywhere. Just overall all wacky!!

Or perhaps he programs a mini video game just special for M to play?

M would be a bit overwhelmed seeing how over the top Colin was being, and how detailed he seemed to remember things about them. Probably surprised, but definitely happy to how Colin could just craft something up in their digital world so effortlessly.

For the mini game, M would definitely be giggling in joy at how he made a game just after them. Definitely enjoying the gameplay, and making notes throughout the whole thing.
