i don't know if it's quite as detailed as you're thinking of but there is HGTV garden flipper
I looked at that but I’m torn about having to spend the $30 for something that isn’t exactly what I want. We’ll see!

I have half an idea that Giants Software, who do Farming Simulator 20 and that line wold be great for this, and I might actually try one of their arm sims to scratch the itch. They seem like they get the detail oriented tight-assery a game like that would require.
Or maybe I’ll teach myself how to build a game with Unity this week. XDD
