Different mushrooms have different beneficial compounds and oyster mushrooms are rich in #ergothioneine, which I just read a paper call a "most unusual amino acid with substantial #antioxidant efficacy" and which "appears to be an important physiologic cytoprotectant which probably merits designation as a vitamin." (PMID: 19911007). # I like to slice and sautee in some good EVOO with salt and pepper, maybe some garlic or shallots, and use them as a topping on a #CongeeBowl. They're also delicious just served as a side with whatever else you're eating.
