For busy mornings, these Freezer Croissant Breakfast Sandwiches are great. Before you eat them, freeze them and heat them up in the microwave for a quick and filling breakfast.
Ingredients: 6 large eggs. Salt and pepper to taste. 6 croissants, split in half. 6 slices of cooked bacon. 6 slices of cheddar cheese. 1 tablespoon butter.
Instructions: In a bowl, whisk together the eggs, salt, and pepper. Heat a non-stick skillet over medium-low heat and melt the butter. Pour the whisked eggs into the skillet and cook, stirring occasionally, until they are scrambled and cooked to your liking. Remove from heat. Place a slice of cheddar cheese on the bottom half of each croissant. Top the cheese with a cooked bacon slice. Spoon the scrambled eggs on top of the bacon. Place the top half of the croissant on top to form a sandwich. Wrap each sandwich in plastic wrap or aluminum foil. Label and date the sandwiches and place them in the freezer. To reheat, remove the sandwich from the freezer, and unwrap it. Microwave the sandwich on a microwave-safe plate for 1-2 minutes or until heated through.
