Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup mint chocolate chips. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon peppermint extract. Chocolate shavings for garnish. Fresh mint leaves for garnish.
Instructions: Preheat oven to 350F 175C. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract to the wet ingredients and mix until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mint chocolate chips. Press the cookie dough into a deep-dish pie pan, creating an even layer. Bake for 20-25 minutes or until the edges are set and the center is slightly gooey. Let the cookie cool completely in the pan. In a separate bowl, whip the heavy cream until soft peaks form. Add powdered sugar and peppermint extract, continue whipping until stiff peaks form. Cut the cooled deep-dish cookie into chunks. In serving glasses, layer the cookie chunks with the mint whipped cream. Repeat the layers until the glass is filled. Garnish with chocolate shavings and fresh mint leaves. Serve immediately and enjoy!
