Ingredients: 1 boneless pork loin roast about 2-3 pounds. 8-10 slices of Applewood smoked bacon. 2 cloves garlic, minced. 1 teaspoon dried rosemary. 1 teaspoon dried thyme. Salt and black pepper to taste. 2 tablespoons olive oil.
Instructions: Set the oven temperature to 375F 190C. Minced garlic, salt, black pepper, dried thyme, and rosemary should all be combined in a small bowl. Distribute the spice mixture evenly over the roast pork loin. If needed, use toothpicks to hold the bacon slices in place as you wrap them around the pork loin. In an ovenproof skillet, warm the olive oil over medium-high heat. When the bacon is hot, sear the pork loin wrapped in bacon for three to four minutes on each side, or until the bacon is crispy and golden brown. Place the pork loin-filled skillet in the oven that has been preheated. Roast the pork loin for 25 to 30 minutes, or until the internal temperature reaches 160F 71C for medium-rare or 145F 63C for medium-rare. Before slicing, take the pork loin out of the oven and allow it to rest for five to ten minutes. After slicing, serve the Applewood Bacon Pork Loin with your preferred side dishes.
