If individual people want to copy/be inspired by my plushies and try to make your own by eyeballing the patterns, go for it.
Just don't mass produce them in factories. Have fun, you can even sell the stuff you hand make, but don't do it on a big commercial scale.
Sewing patterns can't be copyrighted. You can copyright the artwork or the instructions, but the shape of fabric pieces sewn together can't be protected because what if someone copyrighted the pattern of a t-shirt or trousers? It's better for everyone this way.
I don't share the artwork I get printed as patterns because that's something I work really hard on and what makes my stuff unique, but if you wanted to be inspired by my work and paint your own, go for it!
