Ingredients: 2 cans 14 oz each coconut milk. 1 can 14 oz sweetened condensed milk. 1 cup heavy cream. 1/2 cup rum optional. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon salt.
Instructions: In a mixing bowl, combine the coconut milk, sweetened condensed milk, heavy cream, rum if using, cinnamon, nutmeg, and salt. Mix well until smooth and creamy. Transfer the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency. Transfer the churned ice cream into a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Serve scoops of coquito ice cream garnished with a sprinkle of cinnamon or nutmeg, if desired.
