This Skinny Mexican Corn Dip is a healthier take on the classic party favorite. Packed with flavorful ingredients like corn, black beans, tomatoes, and spices, it's creamy, cheesy, and irresistibly delicious.
Ingredients: 1 cup Greek yogurt. 1 cup canned corn kernels, drained. 1/2 cup black beans, rinsed and drained. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 jalapeo pepper, seeded and finely chopped. 1/2 teaspoon chili powder. 1/4 teaspoon cumin. 1/4 teaspoon garlic powder. Salt and pepper to taste. 1/2 cup shredded reduced-fat Mexican cheese blend.
Instructions: Greek yogurt, corn kernels, black beans, tomatoes, red onion, cilantro, jalapeo pepper, chili powder, cumin, garlic powder, salt, and pepper should all be mixed together in a bowl. Mix everything together well. Put the mixture in a baking dish and make sure it's spread out evenly. Add some shreds of cheese on top. Put the dish in an oven that has already been heated to 350F 175C and bake for 20 to 25 minutes, or until the cheese melts and bubbles. Serve hot with vegetable sticks or tortilla chips.
