Ingredients: 1/2 cup diced bacon. 1 onion, diced. 2 cloves garlic, minced. 2 potatoes, peeled and diced. 2 cups seafood stock. 1 cup heavy cream. 1 cup mixed seafood shrimp, scallops, crab, etc., chopped. 1 cup corn kernels. 1/2 teaspoon dried thyme. Salt and pepper to taste. Chopped parsley for garnish.
Instructions: Diced bacon should be cooked in a big pot until it gets crispy. Take the bacon out of the pot and set it aside. Leave the bacon fat in the pot. Chop up some onions and garlic and add them to the pot with the bacon fat. Cook the onions until they become clear. Add the diced potatoes and cook for a few minutes. Add the seafood stock and bring the soup to a low boil. Keep cooking until the potatoes are soft. Pour heavy cream into the pot. Then add mixed seafood, corn kernels, dried thyme, and the crispy bacon that you saved. Keep cooking for 5 to 10 minutes more, until the seafood is fully cooked. Add pepper and salt to taste.
