Ingredients for the pastry:
300g all purpose flour
1 tsp baking powder
200g butter
70ml water
30ml vodka
Pinch of sea salt

Corned beef pie recipe
I know this is not the healthiest of meals, but I never claimed to be a clean eater. I do eat healthily but I always feel you need some of what you like not necessarily what you need. As long as you workout and eat right the majority of the time, I feel you can afford to cut loose every now and then. Anyway onto the recipe, for it you will need: 1 large onion 250g of bacon 100g of cheese A tin of corned beef Some pre-prepared pastry (shortcrust), enough to line a quiche dish and then to top the pie. A quiche dish Pre-line the quiche dish with the shortcrust pastry and pre-cut the pie lid, it makes life so much easier this way round. Pre-heat the oven to 180 centigrade or 160 centigrade for a fan oven. 1) cut the onion and bacon finely, cook the onion 1st then add the bacon once the onion has started to nicely brown off. 2) once the bacon is cooked, add the corned beef to the mix. Break it up in the frying pan and mix it thoroughly with the onion and bacon. The corned beef should start to go more paste like with heat and time 3) cut the cheese finely to make it easier to melt. Once the corned beef is nicely mixed and worked to a paste like consistency, add the cheese and mix it all in. Once melted take off the heat and put to one side. 4) with your quiche dish that you prepared earlier, add the mix to the dish. Smooth it all down then put on the pie lid and crimp the edges with a fork. You can choose to seal it with egg brushed onto the pastry, but I never bother. You can also lightly score the top with a fork, making sure not to score too deep so you reveal the filling. Then pop it in the oven for 30 mins. 5) remove after 30 mins and enjoy either hot or cold, both make it taste totally different but equally awesome. It should go well cold with a salad, or hot with mashed potatoes and green beans. Please note you don't really need salt for this dish as it is salty enough with the bacon, cheese and corned beef. And to be fair you can cook it without the bacon and cheese, I just like it with them as I like bacon and cheese :) it is damn simple and really tasty.
