A vegan chowder that is creamy and warm, made with corn, potatoes, and tasty spices. Ideal for a cozy meal.
Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 3 cups vegetable broth. 3 cups potatoes, diced. 2 cups corn kernels fresh or frozen. 1 cup unsweetened almond milk. 2 tbsp nutritional yeast. 1 tsp smoked paprika. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the minced garlic and diced onion and saut until the onion turns clear. Add diced potatoes and vegetable broth. Turn the heat down to low and cook for about 15 minutes, until the potatoes are soft. Add the nutritional yeast, smoked paprika, salt, and pepper, along with the corn kernels and mix well. Keep cooking for five more minutes. Take it off the heat and, if necessary, change the seasoning. If you want, you can serve it hot with fresh parsley on top.
