What’s your favorite thing to do with discarded sourdough starter? I’m starting a batch during quarantine. Apparently putting it in the chicken scrap bucket is the wrong answer because it keeps growing and overflows on the counter.
Yeah, we have to remember that yeast continue to bud and multiply, whether they’re in our starter jar or in whatever you call the bucket of stuff that goes into the compost pile.
My favorite things to make include pancakes and waffles, English muffins, and crackers.
The easiest thing to make, though, is a little blob of fried dough with some yummy stuff, like garlic and chili flakes, on it.
I put some olive oil in the pan, drop some garlic and chili flakes into it, and heat it all up until it is shimmering. Then I drop a little bit of starter discard into it, doing my best to incorporate the garlic and chili flakes. I let that fry up for a couple of minutes, flip it over, and cook it until it’s done.
...I, um, need to go make some of that for myself, right now.
