A convenient and delicious slow cooker meal prepared with ingredients from Costco. Perfect for busy days!
Ingredients: 3 lbs boneless, skinless chicken breasts. 1 lb baby carrots. 1 lb red potatoes, quartered. 1 onion, chopped. 1 cup chicken broth. 1/4 cup soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste.
Instructions: In a bowl, mix together chicken broth, soy sauce, honey, garlic, thyme, and rosemary. Place chicken breasts in the bottom of the slow cooker. Arrange carrots, potatoes, and onion around the chicken. Pour the broth mixture over the chicken and vegetables. Season with salt and pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender.
