A creamy and comforting chicken corn chowder that is easy to make in a slow cooker. It's great for busy days when you want a hearty soup to warm you up at night.
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 4 cups frozen corn kernels. 4 cups potatoes, peeled and diced. 1 onion, finely chopped. 3 cloves garlic, minced. 4 cups chicken broth. 2 cups milk. 1 cup heavy cream. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 2 cups shredded cheddar cheese. Chopped green onions for garnish.
Instructions: Place diced chicken, corn, potatoes, onion, and garlic in the slow cooker. Add chicken broth, milk, heavy cream, dried thyme, dried rosemary, salt, and pepper. Stir well. Cover and cook on low for 6-8 hours or until chicken is cooked through and potatoes are tender. About 30 minutes before serving, stir in shredded cheddar cheese until melted and incorporated. Serve hot, garnished with chopped green onions.
