A delicious and creamy vegetable casserole cooked slowly in a crockpot, packed with cheesy goodness and nutritious vegetables.
Ingredients: 4 cups mixed vegetables such as broccoli, cauliflower, carrots. 1 cup diced onions. 1 cup diced bell peppers. 1 cup shredded cheddar cheese. 1 cup shredded mozzarella cheese. 1 cup milk. 1/2 cup grated Parmesan cheese. 1/4 cup all-purpose flour. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: In a bowl, whisk together milk, flour, garlic, thyme, salt, and pepper until smooth. Layer mixed vegetables, onions, and bell peppers in the slow cooker. Pour the milk mixture over the vegetables. Sprinkle shredded cheddar and mozzarella cheese on top. Cover and cook on low for 4-5 hours or until vegetables are tender. Sprinkle Parmesan cheese over the casserole before serving.
