Even though it’s a non bake cheesecake, this is the first “baking” I’ve done in YEARS. I love cooking dinner, or making a roast, but I’ve always wanted to make desserts as they are my fave. So for Easter me and @loraproudy made Easter egg cheesecakes. It’s simple, make a cheesecake mix with mascarpone, vanilla extract, double cream, icing sugar, then crumble up some digestive biscuits and bond with hot butter, then decorate! We left ours in the fridge overnight and they’ve set perfectly. We changed it up by putting the biscuit on display rather than hidden underneath the cheesecake mix. Mine are the ones with the flowers xx.
