crisp rice cupcakes

These simple no-bake cupcakes are great fun for the budding young chef to try.

Ingredients

200 g (7 oz) dark chocolate 100 g (2 1⁄2 oz) unsalted butter, softened 5 tbsp golden syrup 100 g (3 1⁄2 oz) crisp rice cereal

Instructions

Place 12 foil or paper baking cases on a tray.

Place the chocolate and butter in a medium bowl over a pan of simmering water, and stir until melted.

Remove tin from the heat and stir in the golden syrup and cereal. Drop spoonfuls of the mixture into the cases.

Refrigerate for 1 hour before serving.

Store in an airtight container for up to 5 days.

Easter cornflake cakes :)) Hoping you won’t need the recipe for this! Very happy with these gorgeous polka dot Easter themed cupcake cases I picked up for £1! I even managed to make the right amount to fill all the cases. Also I'm stretching out my Easter baking all week as I had other commitments at the weekend so I couldn't bake in time for Easter. However, I only have a couple of recipes left to bake and to post and then I’ll resume as normal. Hope you’re all enjoying these Easter recipes as I‘ll keep posting anyway! ;)
