Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup powdered erythritol. 1 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1 large egg white.
Instructions: Preheat your oven to 300F 150C and line a baking sheet with parchment paper. In a large bowl, mix together the almond flour, coconut flour, powdered erythritol, cinnamon, and salt. Add the melted butter and vanilla extract to the dry ingredients, and mix until well combined. In a separate small bowl, beat the egg white until frothy. Fold the beaten egg white into the dough until fully incorporated. Spread the dough evenly onto the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, stirring occasionally to ensure even baking. Once baked, remove from the oven and let cool completely. Break the cooled cereal into small clusters and store in an airtight container. Serve with your choice of milk or yogurt, or enjoy as a crunchy snack!
