These puffy shells will make your taco night better. They're a fun take on traditional tacos because they're crispy on the outside and full of tasty beef and fresh toppings.
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 tsp chili powder. 1/2 tsp cumin. Salt and pepper to taste. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup shredded cheddar cheese. 1/4 cup sour cream. 8 small flour tortillas. Oil for frying.
Instructions: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat. Add diced onions and minced garlic to the beef. Cook until onions are soft. Stir in chili powder, cumin, salt, and pepper. Simmer for 5 minutes. In a separate skillet, heat about 1 inch of oil over medium-high heat. Using tongs, gently place a tortilla into the hot oil. It will puff up in about 10 seconds. Flip and cook the other side until golden brown. Drain on paper towels. Repeat with the remaining tortillas. Fill each puffy shell with the beef mixture, lettuce, tomatoes, shredded cheese, and a dollop of sour cream. Serve immediately and enjoy your puffy tacos!
