Bacon Wrapped Shrimp
The hardest part of my day usually revolves around my food decisions. Hanging out in the living room with my roommate she said something that inspired to make this succulent appetizer "just freakin add bacon". So I did. Today I made an oven baked shrimp wrapped with maple bacon with a side of lemon, dill and garlic aioli.
Here's what you need
6-8 peeled and deveined shrimp, tail on (per person, I happen to have a big appetite)
4 Strips of maple bacon cut in half
For the sauce
3 Tbsp of mayo
1 Finely minced garlic clove
1 Tsp of fresh lemon juice
1 Tbsp of extra virgin olive oil
A pinch of dried dill
Salt and pepper to taste
Instructions
Preheat the oven to 425
Wrap a slice of bacon around each shrimp and tuck the bacon in to make sure it's completely wrapped and doesn't fall apart
Place in the oven for 12 minutes, you want to make sure the bacon is nice and crispy and the shrimp isn't overcooked. Overcooked shrimp simply taste like rubber.
For the sauce, just mix everything together and serve.
