A tasty vegan dish made with tofu and fragrant curry spices that is great for a quick and filling meal.
Ingredients: 1 block tofu, pressed and cubed. 1 tablespoon olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 teaspoon curry powder. 1/2 teaspoon turmeric powder. 1/2 teaspoon cumin powder. 1/4 teaspoon cayenne pepper. 1 tomato, diced. 1 cup vegetable broth. Salt and pepper, to taste. Fresh cilantro, for garnish.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Put in the minced garlic and chopped onion. Saut until the onion turns clear. Put the cubed tofu in the pan and cook it until all sides are golden brown. Add the cayenne pepper, curry powder, turmeric powder, and cumin powder to the tofu and mix it around to make sure it's evenly covered. Mix the vegetable broth and diced tomatoes together in the pan. Let the flavors blend and the sauce get thicker by simmering for 10 to 15 minutes. Add pepper and salt to taste. Add fresh cilantro as a garnish before serving.
