Ingredients: 4 bone-in pork chops. 2 apples, cored and sliced. 2 leeks, sliced. 2 tablespoons olive oil. 2 teaspoons curry powder. 1 teaspoon ground cumin. 1 teaspoon ground coriander. Salt and black pepper to taste. Fresh cilantro for garnish.
Instructions: Preheat your oven to 400F 204C. Season the pork chops with curry powder, ground cumin, ground coriander, salt, and black pepper. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for 3-4 minutes per side until golden brown. Remove the pork chops from the skillet and set aside. In the same skillet, add sliced leeks and cook for 2-3 minutes until softened. Add sliced apples to the skillet and toss with the leeks. Place the seared pork chops on top of the leeks and apples. Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the pork reaches an internal temperature of 145F 63C.
