If you are so fortunate enough to live by a whole food type of bakery, then get on any subscription they have, and do it tomorrow. If they don't have one, FB message and ask them. I get thrills from working with businesses like this, because behind the business is a girl with so much passion and drive and hunger and thirst to see her dreams happen, it makes my heart fly to photograph her message. This bakery is managed by Dawn Smith who started Off the Wheaten Path Bakery. She moved her family, including her teenagers, so they could finally own their dream home, that included a small farm and bakery. She had dreamed of this for years. And finally one open up but it was hours away from their current city, so after lots of heart pulling decisions, they decided to follow their dreams and move. Immediately after she was hard at work baking for her new community. This is when I met her. I loved her soft spoken kind and generous personality instantly. After a couple months of baking she started to get very sick. So then began the long journey of trial and error, finding out why; and after almost a year, she realized she was so allergic to dairy, eggs, gluten and most sugars, that even if she touched it, it would make sores all over her skin and inside her belly. She couldn't work with the ingredients she needed most to bake with. This is her life long dream. And now, after moving her entire life, she found out she couldn't even do it. It was heart wrenching. I talked with her a bit during this stage. One day I saw her, and she had a stubborn gleam in her eye, and a pep in her walk. She then announced that she had found a way around all these allergies, and she was now going to cook and bake wholesome food, breads and desserts for those who needed an alternative too. She didn't get up her dreams when a huge stumbling block fell in her way. She just climbed the Rock and admired the view. Then she set out to find ways to make food taste good without any typical ingredients. She had been passed down secrets from her grandmothers, and she decided to go back over her memories and notes as a young girl and see what she could find. #darebig
