One of the most popular menu in seafood restaurant is Stir-Fried Squid with Salted Egg Yolk. It’s a great combination. My family and I always order this dish when eating out and traveling. I can say it's our family favorite. Eventually, we thought we could try making it ourselves. So, we created this dish as our family recipe! It’s different from the restaurant because it has a little more water and more flavourful!
Ingredients
5-7 shrimps
2 squids
2-3 salted eggs
1 tablespoon of chili paste oil
1/2 teaspoon of chili paste
1-2 tablespoon of minced garlic
2 Spring onion
2 Red Chili
1 and 1/2 tablespoon of light soy sauce
3/4 teaspoon of Sugar
1/2 teaspoon of Ground Pepper
Method
1. Boiled shrimp and squid.
2. Separate egg white albumin and egg yolk from salted egg.
3. Mixed egg yolk with chili paste oil, chili paste, light soy sauce, sugar (you could add a few white egg albumin paste to increase saltiness).
4. Fry garlic in vegetable oil to get a good aroma and then quickly fry all the ingredients.
Season with ground pepper and serve.
