I love slices, there not something I typically bake, I don't know why? Maybe because typically they contain a lot of sugar. Not this one, the coconut and dates take care of that.
I adapted this recipe from the edmonds cookbook, unglutanised it and tweaked the recipe. Im really happy with the result as is everyone who has tasted it.

Coconut Caramel Date fingers
Filling
1 cup dates, chopped
1 cup water
1 Tbsp brown sugar
1 tsp butter
2 tsp cocoa
¼ tsp vanilla essance
Base
125g butter
½ c sugar
1 egg
1 ¾ cup gluten free flour
1 teaspoon baking powder
1 cup coconut
Method
Filling
Place all the ingredients for the filling into a saucepan, gently eat on low stirring occasionally until a paste is formed.
Base
Preheat your oven to 180 C.
Cream the butter and sugar together until pale and creamy. Add the egg and mix well.
Sift flour and baking powder together. Mix into creamed mixture. Divide the mixture in half.
Press half the base into a 20cm square tin. Spread the date paste on top.
Add the coconut to the remaining base mixture, mix until combined, sprinkle the mixture on top of the date.
