Today's work involved a special dinner for 33 pax. Starter was Pacific Crab Lump Crab Cake with Mousseline Espuma and smoked feta apple salad followed by a Roasted Chicken Casserole Soup with croutons and root vegetables. Main course was a choice of Pan Seared Sous Vide Chicken with Truffle Potato Gratin, Sautéed Green Peas with a Sriracha Cream Sauce or Grilled Norwegian Salmon with Crustacean Bearnaise, Herbed Fondant Potato, and Provencal Roasted Vegetables; or 8 hours Slow Roasted Angus Brisket with Sautéed Haricot Vert, Truffle Mashed Potatoes, Roasted Shallots and Beef Jus. To end the night a dessert of Chocolate Dome with Passion fruit ice cream, mix fruits and torn brownies. Some of the pictures are missing but alas...
