Vanilla Bean Macarons
Delicate and fruity, these Peach Cookies combine the goodness of peaches with a buttery cookie base. The peach preserves add a burst of flavor to each bite.
Ingredients: 2 cups all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 egg. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup peach preserves. 1/4 cup finely chopped fresh peaches.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Mix the egg and vanilla extract into the butter mixture until everything is well mixed together. Slowly add the salt and flour to the wet ingredients and mix them together until a dough forms. Mix the fresh peaches that have been chopped up into the dough slowly. Take tablespoon-sized chunks of dough and roll them into balls. Spread them out on the baking sheet that has been prepared. Make a hole in the middle of each cookie with your thumb or the back of a teaspoon. Place a small amount of peach preserves in each hole. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Enjoy these tasty peach cookies after they've cooled down!

Ingredients: 2 cups cornstarch. 1 cup all-purpose flour. 1/2 cup powdered sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup dulce de leche. 1 teaspoon vanilla extract. Powdered sugar, for dusting.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the cornstarch, all-purpose flour, powdered sugar, baking powder, baking soda, and salt. Add the softened butter and mix until the dough comes together. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for about 30 minutes. Roll out each portion of dough to about 1/4-inch thickness on a lightly floured surface. Using a round cookie cutter, cut out cookies and place them on the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes or until the edges are lightly golden. Let the cookies cool completely on a wire rack. Spread a generous layer of dulce de leche on the bottom side of one cookie and sandwich it with another cookie. Dust the assembled alfajores with powdered sugar. Enjoy these traditional Alfajores cookies with a cup of mate or coffee!
