Ingredients: 1 cup all-purpose flour. 2 large eggs. 1 1/4 cups milk. 1/4 cup water. 2 tablespoons melted butter. 1 tablespoon sugar. 1/2 teaspoon salt. 1 lemon, zested. 1/4 cup lemon juice. 1/4 cup granulated sugar. 2 tablespoons cornstarch. 1/2 cup water. 2 tablespoons unsalted butter. Powdered sugar for garnish. Fresh berries optional, for garnish.
Instructions: In a blender, combine the flour, eggs, milk, 1/4 cup water, melted butter, 1 tablespoon sugar, salt, and lemon zest. Blend until smooth. In a small saucepan, whisk together 1/4 cup lemon juice, 1/4 cup granulated sugar, cornstarch, and 1/2 cup water. Bring to a simmer over medium heat, stirring constantly, until the mixture thickens and becomes translucent. Remove from heat and stir in 2 tablespoons of butter until smooth.
