Sweet and flavorful, Roasted Seedless Grape Jam is a great spread for breakfast or to go with a variety of meals. This homemade jam gains a distinct depth and its grape flavor is enhanced by roasting.
Ingredients: 4 cups seedless grapes. 1 cup granulated sugar. 1 lemon, juiced. 1/2 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C. Wash the seedless grapes thoroughly and remove any stems. Spread the grapes evenly on a baking sheet. Roast the grapes in the preheated oven for 30-35 minutes, or until they begin to soften and wrinkle. Remove the roasted grapes from the oven and let them cool slightly. Transfer the roasted grapes to a food processor or blender and pulse until you have a smooth puree. In a large, heavy-bottomed saucepan, combine the grape puree, granulated sugar, lemon juice, and vanilla extract. Cook the mixture over medium heat, stirring frequently, until it thickens and reaches the desired jam consistency. This will take about 20-25 minutes. To test the jam's consistency, you can place a small amount on a chilled plate and see if it sets up to your liking. Once the jam is ready, remove it from the heat and let it cool for a few minutes. Transfer the jam into sterilized jars and seal them tightly. Allow the jam to cool completely before storing it in the refrigerator.
