Ingredients: 4 fish fillets such as cod or halibut. 1/2 cup black olives, pitted. 1/4 cup sundried tomatoes, drained. 2 cloves garlic. 2 tablespoons olive oil. 1/4 cup almond flour. 1/4 cup grated Parmesan cheese. 1 tablespoon fresh parsley, chopped. Salt and pepper to taste.
Instructions: Preheat the oven to 400F 200C. In a food processor, combine the black olives, sundried tomatoes, garlic, and olive oil. Pulse until finely chopped. In a shallow dish, mix together the almond flour, Parmesan cheese, and chopped parsley. Season with salt and pepper. Pat the fish fillets dry with paper towels and season them with salt and pepper. Spread the olive and sundried tomato mixture evenly over the top of each fish fillet. Press the almond flour mixture onto the olive and sundried tomato mixture, forming a crust. Place the fish fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown. Serve hot, garnished with additional fresh parsley if desired.
