A refreshing and colorful pasta salad featuring the delightful combination of tender broccoli, juicy blueberries, crunchy walnuts, tangy feta cheese, and a zesty lemon buttermilk dressing. Perfect for picnics, potlucks, or as a side dish for any meal!
Ingredients: 8 oz pasta. 2 cups broccoli florets. 1 cup blueberries. 1/2 cup chopped walnuts. 1/4 cup chopped red onion. 1/4 cup crumbled feta cheese. 1/4 cup chopped fresh parsley. 1/4 cup lemon juice. 1/2 cup buttermilk. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste.
Instructions: As directed on the package, cook the pasta. Once it's done, drain it and run cold water over it to cool it down. Boil broccoli florets for one to two minutes, then move them to ice water to stop the cooking. Remove the water and set it aside. Put broccoli that has been blanched, blueberries, walnuts, red onion, feta cheese, and parsley in a large bowl. To make the dressing, mix the lemon juice, buttermilk, olive oil, honey, salt, and pepper in a different bowl using a whisk. Add the dressing to the pasta salad and gently toss to cover everything. Put it in the fridge for at least 30 minutes before you serve it. If you want, add more parsley as a garnish before serving.
