A cool and fragrant gelato that tastes like ripe melon and smells like orange blossom water. It's perfect for hot summer days.

Ingredients: 4 cups ripe melon, cubed. 1 cup orange juice. 1/2 cup sugar. 1/4 cup honey. 1/4 teaspoon orange blossom water. 1 cup heavy cream.

Instructions: In a blender, puree the melon until smooth. In a saucepan, combine the pureed melon, orange juice, sugar, and honey. Cook over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is slightly thickened, about 5-7 minutes. Remove from heat and stir in the orange blossom water. Let cool to room temperature. Once cooled, stir in the heavy cream until well combined. Transfer the mixture to an ice cream maker and churn according to manufacturer's instructions, usually about 25-30 minutes. Transfer the gelato to a container and freeze for at least 4 hours before serving.
