This homemade plum jelly is a delicious and sweet way to preserve the flavors of ripe plums. Spread it on toast, use it as a glaze, or enjoy it as a condiment with your favorite dishes.
Ingredients: 4 cups of ripe plums, pitted and chopped. 1/2 cup of water. 4 cups of granulated sugar. 1/4 cup of lemon juice. 1 packet of powdered pectin.
Instructions: Add the water and chopped plums to a large saucepan. Simmer for 15 to 20 minutes over medium heat, or until the plums are tender and mushy. To extract the juice, use a potato masher to mash the plums. Pour the plum juice into a big bowl after straining it through cheesecloth or a fine-mesh sieve, getting rid of any solids. Pour the strained juice back into the saucepan and stir in the powdered pectin and lemon juice. Mix thoroughly. Stirring continuously, bring the mixture to a boil over high heat. When boiling, immediately add the powdered sugar and stir constantly. Skim any foam that forms on top and continue boiling the jelly for another one to two minutes, or until it reaches the desired consistency. Take the plum jelly off the stove and carefully pour it into sterile jars. To make sure the jars are properly sealed, cover them with lids and process them in a boiling water bath for ten minutes. Allow the jars to reach room temperature and cool. Press the center of each lid to ensure the seals are intact; the lid should not pop back. Place the plum jelly in a cool, dark place after labeling it. Have fun!
