Forgot to post a bake I did last weekend. Call me a French bake now, I've made my first choux! Sike, I've got a long way to go for that. These profiteroles have raspberry cream cheese mousse inside and topped with a milk chocolate ganache. This gingerbread roll with eggnog cream cheese filling was created for my book club's pot luck at Traditions Brewery last night. I had to fold the meringue into the batter and I kept giggling because all I could think of was the infamous Schitt's Creek scene. It was a delicious bake and just look at that swirl. Tonights dinner is a mushroom ragu over linguini. 2lbs of assorted mushrooms, celery, carrot, and canned romas. I added additional seasoning than what was called for in the recipe.
