ugh i know and it makes me so MAD and FRUSTRATED
emma is a book i hold the closest to my heart. i've reread it countless times, watching every adaptation. i'm starting to feel like some of the characters COUGHEMMACOUGH is a caricature of they were in the book.

@sassymrknightley answered: yeah part of the difference is that mrs. taylor was almost like a mother to emma. here she’s not in a position of authority at all.
That's the problem: There's no respect. You see, even though Miss Taylor was just a governess, Emma still considered her as more than that. (As evidenced by how affected she was once she was gone along with her continuous communication with Miss Taylor even once she became Mrs Weston.) Miss Taylor was like family to the Woodhouses. For this Emma to count Annie - as you have stated - as just a statistic in her new found business venture, it struck me as rather odd and felt like a departure from the book that I don't find very welcome.
What's more, Emma is actually quite respectful of the decisions other people make in general. Even later in the book when she pretty much did twist Harriet's choice in regards to Mr. Martin, Emma still made sure it was Harriet's decision - albeit leaving not so subtle hints about her disapproval. Though one has to remember that Harriet is someone who... I'm sorry to say, can't make her own decisions without explicit approval of another.

Yes! It's bugging me too. The Miss Taylor/Emma friendship is so important too.
