Some Ideas for Spiced Rum

Hot Drinks:
Spiced Jamaican Coffee
1/2 oz spiced rum
1 oz Cognac or brandy
1 tsp brown sugar
8 oz fresh coffee
optional: whipped cream
Spiced cider
2 oz spiced rum
8 oz hot apple cider
garnish with cinnamon stick.
Spiced Tom and Jerry (makes 2)
1 egg, separated
1 oz dark rum
1 oz spiced rum
2 oz brandy
1 Tbl sugar
pinch of allspice
pinch of ground clove
12 oz hot milk
Whisk egg yolk with the liquor and spices in small bowl. Whip egg white and sugar until stiff peaks then fold into yolk mixture. Divide between 2 warmed mugs and top with hot milk. stir and sprinkle with nutmeg
Cold drinks:
Daiquiri
2 oz spiced rum
1/4 cup frozen fruit of choice
1/2 banana
3/4 oz lime juice
1/2 oz simple syrup
blend with ice in blender.
This might be nice with spiced rum, but don't know if you have apple brandy:
Bolero
1 1/2 oz rum
3/4 oz Calvados or applejack
1/2 tsp sweet vermouth
