Columbus stove from the 50′s
Veggie Overload Tacos
*Heat oven to 400
*Gather for Taco Filling
1 Large Sweet Potato
1 Large Zucchini
1 Bell Pepper, Any Color
1 Large Handful of Crimini Mushrooms
1 Can of Black Beans
1/2 Can of Corn
*Gather for Taco Toppings
Sour Cream
Hot Sauce
Feta or Cojita Cheese
Cilantro
Lime Wedges
*Gather for Salsa
1 Small White Onion
1 Medium Tomato (Remove all Pulp)
Juice of 1 Lime
1 Bunch Cilantro
Fresh Garlic to Taste
Salt and Pepper to Taste
*Prepare Taco Filling
Chop sweet potato in to small/medium pieces
Place sweet potato on a baking sheet and dress with oil of your choosing, salt, and pepper
Bake for approximately 15 minutes until tender
Begin to chop all other vegetables in to small/medium pieces
Throw all vegetables, including sweet potato, in to a large oiled skillet
Add black beans and corn
Cook until all veggies are tender and season with salt and pepper
*Prepare Toppings
Place a few spoonfuls of sour cream in to bowl and add as little or as much of your favorite hot sauce
Stir to combine
Set aside sliced limes and cheese
*Prepare Salsa
In a food processor add all ingredients
Grind until all are thoroughly combined
Strain out Juices
*To assemble, heat corn or flour tortillas, place a spoonful of veggie filling, salsa, sour cream, cheese, cilantro, and lime juice.
*Take note that if you are vegan you can simply omit the sour cream and cheese, or use your own soy products!!
