Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 3 tablespoons tahini. 3 tablespoons freshly squeezed lemon juice. 2 cloves garlic, minced. 2 tablespoons olive oil. 1/2 teaspoon ground cumin. Salt to taste. 1 tablespoon fresh parsley, chopped for garnish. Zest of 1 lemon for garnish.
Instructions: Put the garlic, olive oil, ground cumin, tahini, lemon juice, and a pinch of salt in a food processor. If you need to, scrape down the sides of the bowl as you blend to make the mixture smooth and creamy. You can add a little water to get the consistency you want if it's too thick. If you think it needs more salt or lemon juice, taste it and add more of either. Place the lemon hummus in a bowl to serve. Top with lemon zest and chopped fresh parsley.
