This Dirty Thai Fried Quinoa is a vegan take on the traditional Thai fried rice. It is full of flavor and healthy ingredients. This dish is filling and simple to make, making it great for a quick dinner during the week or for meal planning.
Ingredients: 2 cups cooked quinoa. 1 tablespoon sesame oil. 1 onion, chopped. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 cup frozen peas. 2 carrots, grated. 1 cup broccoli florets. 1/4 cup soy sauce. 2 tablespoons sriracha sauce. 1 tablespoon maple syrup. 2 tablespoons lime juice. 1/4 cup chopped cilantro. 1/4 cup chopped peanuts. Lime wedges, for serving.
Instructions: On medium heat, warm up the sesame oil in a big pan. Add the minced garlic and chopped onion and saut until the garlic smells good. Cut up some red bell pepper, frozen peas, carrots, and broccoli florets. Make sure the vegetables are soft. Soy sauce, sriracha sauce, maple syrup, and lime juice should all be mixed in after the quinoa is cooked. Stir every now and then for another 5 minutes. Put it away from the heat and top it off with peanuts and chopped cilantro. Put lime wedges on the side and serve.
