So not my very first meal, and definitely won’t be my last on this vegetarian possibly vegan adventure. This meal was completely vegan for those interested. Started with a base of Meatless chorizo tossed with a tri-blend (red, yellow, blue) of baby potatoes, served on a corn tortilla. Topped with a homemade avocado cream sauce, chopped lettuce, pineapple salsa, a citrus chipotle dressing, fresh squeezed lime, and some cilantro. Man o man was this yummy!!
