Quail with Watercress. I really wasn’t feeling the project today, but I didn’t want my quail to spoil. I learned how to truss quail today so that’s a thing. The recipe called for plain butter but I thought this would be a good use on my garlic scape butter I had made. This isn’t really a set a flavors a lot of folks are used to these days. Rather like the bacon topped veal it’s delicious but alien. It’s also somewhere between a roast and a salad.
