I have a partial Irish-American heritage. One thing I love is corned beef brisket (mostly for the leftovers to make corned beef hash because breakfast is life). I could make boiled potatoes and carrots and cabbage as the sides to be traditional, or I can make curtido instead. It has all the same ingredients, but they’re more flavorful AND I can use it on like tacos during the week.
While I can’t have traditional pupusas anymore, I can still have the curtido which is amazing. So, let’s remix this St. Paddy’s Day, yeah?
