Dragon Chicken with Cashewnuts is a spicy and tasty Indo-Chinese dish made with cashew nuts and tender chicken pieces in a savory sauce.
Ingredients: 500g chicken breast, diced. 1/4 cup cornstarch. 1/4 cup soy sauce. 2 tablespoons vegetable oil. 1 onion, sliced. 3-4 cloves garlic, minced. 1 inch ginger, minced. 1 bell pepper, diced. 1/2 cup cashew nuts. 2 green chilies, sliced. 2 tablespoons tomato ketchup. 1 tablespoon chili sauce. 1 tablespoon vinegar. 1 tablespoon brown sugar. Salt and pepper to taste. Green onions for garnish.
Instructions: For 30 minutes, mix cornstarch and soy sauce with chicken. Put oil in a pan and heat it over medium-high heat. Put in the ginger, garlic, and onions, and saut until the food smells good. Cook the chicken until it is browned and fully cooked. To finish cooking, add the green chilies, cashew nuts, and bell peppers. Put tomato ketchup, chili sauce, vinegar, and brown sugar in a small bowl and mix them together. Add it to the chicken mix and mix it well. Another two to three minutes of cooking will cover everything well and make the sauce thicker. Add more salt and pepper if you think it needs it. Add some chopped green onions as a garnish. Serve hot with noodles or steamed rice.
