Drunken Chicken (醉鸡) Drunken chicken is a classic Chinese cold appetizer that I marinate overnight in a Shaoxing wine brine until the meat is juicy, fragrant, and lightly boozy. I slice it thin, serve it cold, and pour a little of the brine over the top. I have the whole dish ready the day before, which is why it is one of my favorite recipes for dinner parties and bigger family meals.

🐉 Shaoxing zuiji 🇨🇳 (drunken chicken)

(Cook some chicken with ginger, star anise and spring onion greens until tender. Drain the stock. Cover the meat with rice wine and some sesame oil. Leave in the fridge overnight. Serve cold with goji berries.)

✿ 绍兴醉鸡 ・ 紹興酔鶏。浙江菜系に属し地元で有名な料理である。鶏肉とネギ、生姜、ニンニクなどの調味料を入れ蒸す。その後、取り出して冷まして常温に戻し、スープは再利用するので残す。鍋に紹興酒と糖を入れ沸騰させ、鶏肉とスープを加え冷蔵庫に入れて6時間冷凍すれば完成。
