Day 21 of 30
I guess the second half of the month means that I only blog every second day. It also means that I have been very boring and haven’t had much to write about in the past little bit. Which is fair seeing all I do is sit at home, watch tv, play video games, and cook once in a while when I’m feeling like it.
Yesterday I made more of that eatmore brownie thing. It’s so yummy and much better for you than my normal brownie recipe. That recipe has 2 cups of sugar- I think I’ll be sticking to my eatmore brownie sugar-free recipe from here on out.
Yesterday I wasn’t feeling up to cooking so I got the wife to cook supper. And seeing as I don’t cook pasta very well, she decided it would be a good night for pasta. It sure is nice having her home.
This morning I made more vegetable broth so that I could make more some kind of pho or soup for supper today. What an easy thing to make- but takes a while to cook.
So for supper today I made soba noodle soup. I’ve never made anything like this before- nothing close to a pho, so I was pretty happy with the way this turned out. Especially because this soup contained pasta and luckily I did not over or under cook the noodles. So Bam! Soba noodle soup was a hit for me and the wife. Will make again.
Just 9 days left of sugar-free april. I’ve got quite a bit of pasta, rice, and quinoa left- but not much more than that. I got in one of my new vegan cookbooks but the recipes are quite complicated and contain a few ingredients I’ve never heard of. I will have to tackle some of the recipes soon though. But for this next 9 days, I need a few more sugar-free recipes to get me through. Wish me luck! 🌱✌️
