The Ed, Edd n' Eddy Bible has this to say about Ed's parents;
"His mom Xerox’s his sketches for her analyst to check out while his dad hopes he will inherit his vast knowledge of the second hand auto trade."
In the episode Ed, Ed & Away Eddy tells us that his father is a used-car salesman, and in Every Which Way But Ed we see that Ed & Eddy has known each other longer than they've known Double D.
This leads me to believe that Ed & Eddy's fathers are business partners operating a car shop together.

Surprised to hear such a deep thought from Edd, Eddy’s dad got up from his chair and walked over to the young man who stood on the edge of the grass looking up at the moon. Barbara invited him over for dinner. It was a wonderful evening, but as Harold guessed, he could tell that something was bothering Edd for most of the evening.
“You love my son, don’t you?” Harold joined him, looking up at the moon.
Flicking his eyes, Harold wasn’t the most open person. After what his family has been though, he didn’t want to lose another son. So, instead of being angry, Harold made an effort to understand his son’s relationship. Including Edd.
“Um... It’s still confusing,” Edd admitted. He was thankful that this was Eddy’s dad who he was conversing with. He loved Eddy. But, what did Edd know about love? There was no one else for him to talk to, which Harold could sense. Pretty much everyone in the neighborhood knew how his own parents treated him.
THIS IS MY IDEA OF EDDY'S PARENTS
They are made to be the most realistic parents, of course that doesn't mean that they can be as silly as they other adults but they just seem like people you can meet in real life.
They're people that made mistakes but they won't let that be the excuse of not being good parents.
(LINDA MCGEE) Even thought her voice sounds like she smokes three packs of cigarettes a day, she is still the nicest lady you'll ever met. She's a caring and sassy mother and would kinda remind you of Linda from bob's burgers. She a stay at home mom and loves to sew, alot of the time she would find her youngest son wear her clothes and wigs. She's doesn't mind as much as her husband does, Linda knows that Eddy's is just dressing up and exploring himself .. he just better make sure he doesn't ruin any of her clothes.
(HILL MCGEE) He's just Hank Hill, what else to say? He loves his son so much, even tho he likes carrying him like a football because of how tiny he is. Hill is just trying his hardest to be a good role model for Eddy and show him what a man should be, he doesn't want to fail again...
